Chocolate Peppermint Cookies

chocpeppermintcookiesFirst off, I feel like I should apologize for not getting any blogging done in over a month! Things have been super crazy busy lately (ok, I’ve said that before- excuses, excuses) But hopefully this recipe will make up for it 🙂 One reason I’ve been slacking on my blogging duties has to do with my new obsession- essential oils. I’ve been teaching classes, educating myself and also, busy making things like cookies with essential oils. For research purposes, of course. So how fun would it be to combine my two loves, blogging and essential oils, with something else I love- cookies!

Now for the cookies!

So, if you’ve been anywhere near me in the last few weeks, you’ve probably heard me raving about these delicious, chocolate-y, peppermint-y cookies I’ve made, oh, I don’t know, a half dozen or so times in the last month.  But that’s ok, because if you have heard me singing the praises of these cookies, chances are you also got to sample them. Chances are really good you asked me for the recipe too. So without further ado, here it is. Oh, and if you wonder why things have been quiet around the blog, here’s your answer too: I’ve been busy making cookies.

Ingredients

Instructions
  1. Preheat oven to 350 degrees. Combine first 3 ingredients in a large mixing bowl. Add honey, coconut oil, eggs, vanilla and peppermint essential oil. Mix well and let stand for five minutes. Drop dough by rounded tablespoons onto ungreased cookie sheet. Bake for 12 to 14 minutes, until top of cookies are set and firm to the touch. Remove from oven and allow cookies to cool for 15 minutes before removing from cookie sheet. Store in an air tight container. Enjoy!
