My AIP Journey- Day 2

oMRKkMc4RSq7N91OZl0O_IMG_8309Last night, I was feeling a little crummy by the end of the day- exhausted, and I just wanted to go to bed. At 7 o’clock. I think my body is trying to adjust to the increase in protein and decrease in carbohydrates. I slept pretty well until about four o’clock. I woke up and had a little trouble falling back asleep (hello adrenal fatigue!) but was able to catch a little bit more sleep before getting up about 6:20.  One of my goals is to be more consistent about getting up early and spending time reading and reviewing my goals, reading my Bible, praying, thinking and preparing for my day. Sounds simple but the zombie like state that gluten puts me into makes me feel tired and run down all the time, even when I wake up in the morning. See? I’m already seeing benefits of my diet. I love being able to get up before my kiddos and the morning and have some time to myself, preparing for the day and collecting my thoughts.  I was definitely hungry about an hour after I woke up though. Here’s what I ate today:

Day 2- January 2, 2015

Breakfast- I had my usual ginger and lemon tea but seemed especially hungry this morning. I tend to be fine, then all of a sudden, I am ravenous, feed-me-now-or-I-will-hurt-you kind of state. I think this has to do with the whole adrenal fatigue-blood sugar blah blah blah. Anyway, I took some turkey cold cuts, rolled up some sliced red onion and avocado along with some spicy mustard inside and devoured it. Felt better. Later, I had the same pumpkin smoothie I had yesterday. I think this pumpkin smoothie is going to be a life saver for me. I added the leftover avocado to my smoothie for a dose of healthy fat.  Can’t even tell it’s there!

Lunch- I made this awesome chicken cilantro salad! I love this salad! Love it.

Snack- I had a grapefruit; later in the day I made a pumpkin chai tea. Yes, I love pumpkin. Get over it. This was a tad like the smoothie I guess except it was hot. No frozen banana. It was pretty good. I *might* have added a bit more honey than I really should have. I needed it.

Dinner- I made a roast in the crockpot today. It’s been cooking all day and I have been waiting.. all… day… to devour it. Seriously, I wish I could find a way to hoard it all to myself and feed my family ramen noodles. I was actually disappointed when I realized I could have made the roast tomorrow when my oldest would be at a sleepover, thus ensuring ample leftovers for the next day. The leftovers are mine. Don’t touch them. Oh, and I made some roasted sweet potatoes to go along with and some roasted carrots. If I could eat pot roast for every meal, I could do the AIP indefinitely. Mmmm… roast. Don’t touch the leftovers. 😉
