
My AIP Journey- Day 13
So, in case you haven’t figured it out.. I’ve missed a few days on journaling my AIP diet. Unfortunately, it’s just not always that easy to sit down and get it all typed out. And then a few days go by and I forget what I even ate. Which is sort of ironic because I also feel like my meals are pretty redundant- I mean there’s only so much you can do with meat and veggies, right?
Breakfast- I had made a roast the night before (mmm…roast), so I took the leftover roast and chopped it up with some veggies- carrots, onions, broccoli, cabbage, green onions, cilantro- and simmered it in broth. I ran out of olive oil, which would be tragic, except that I found The Deal Of The Century on Kasadrinos olive oil and ordered four 3L cans for 30%!!! I’ve been wanting to try this olive oil for a long time and this deal was just too good to pass up!
Lunch- I forgot to nab a spaghetti squash at the store, which is what I had planned for lunch, so my Plan B was a baked sweet potato, which I topped with some breakfast sausage links I cooked up.
Snack- Chai Pumpkin Latte. Needs no comment. I ate a couple of the AIP orange cranberry muffins I made a few days ago. They were pretty good, but by this time they just didn’t seem to be doing it for me. I think with the avocado in them, they just don’t last as long as a traditional grain based muffin, even keeping them in the fridge. I threw the rest away.
Dinner- I made chicken and dumplings for the family. I saved out a portion of the chicken soup for myself before adding the dumplings and potatoes. I added some extra veggies to my portion and a little coconut oil for healthy fat. Pretty good, actually!
